Lemon Tree Cakes, founded by Pam in 2015, is London cake shop like no other. Cake artistry is the manifestation of Pam’s lifelong passion for painting, ceramics, and nature. Her creations are contemporary masterpieces unique to each wedding. Pam tells us all about her inspiration and the process in creating her awe-inspiring tasty centerpieces.

Tell us about Lemon Tree Cakes and how did your journey begin?

I started Lemon Tree Cakes in 2015. I had always loved and enjoyed painting as a child and that’s something that has been a constant in my life. When I came to the UK it opened me up to all things baking which I have never done before back home in India. And it was really trying to combine my love of painting with my love for all things sweet that the idea of Lemon Tree Cakes came about. I haven’t looked back since. 

How would you describe your cake aesthetic? I would say that my style is definitely contemporary. I am drawn to and take a lot of inspiration from abstract painting, ceramics and nature. The simplicity of this appeals to me greatly. Cake is such a visual thing and you eat with your eyes first. It’s so important to me to create a cake that values my creativity as a cake artist but also honours the couples interests.

Explain your creative process when couples reach out. How do they select a design? 

When I meet with couples the first thing I do is serve cake. Its a great way to relax and ease into a conversation. The goal is to make everyone feel at ease. I also carry a portfolio of my work and talk them through the elements of the cake designs. This is the time for me to focus on their discussion and understand what appeals to them in terms of design and make a note of the observations which helps me create a design that is fitting for their celebration. The venue, the seasons all play a part in the overall aesthetic of the cake design.

What is your most requested flavour cake? I have to say Lemon Blueberry cake studded with fresh blueberries, filled with lemon curd and layered with Swiss meringue buttercream is a definite favourite.

What’s your best piece of advice for couples choosing their wedding cake?

My advice to couples would be to think of your wedding cake as another element to your decor. It’s important that the wedding cake which is the centrepiece of the reception is tailored to the couple and receives just as much care and consideration as other items on display. Remember that the cake is meant to be eaten so work with your cake designer to create a flavour and design that speaks to your style.

Professionally or personally, what inspires you? I think being in nature is my happy place and I draw a lot of inspiration from it. Art, paintings and ceramics is also a great source of inspiration for me. 

Tell us your favourite wedding memory. It’s hard to pick just one favourite wedding memory but a few years back I did a four tier wedding cake for a couple which was adorned with hand made sugar flowers all the way. The brides mother was there to take delivery of the cake and as soon as she saw the cake she gasped, both hands to her face and she started crying. I thought the worst had happened, that I had failed as a cake designer and my heart was beating in my mouth. A few quite seconds later she came over to me and gave me the biggest hug possible saying how I had made her daughter so happy and made her wedding dreams come true. That was truly a very special moment for me. One that will stay with me forever. You know it’s never just cake. It’s a privilege and honour when couples think of me to play a small part in one of the most important days of their lives.
